A Crémant is a sparkling wine, most often French (but it is found in Luxembourg and Wallonia, in particular), white or rosé, elaborated according to the so-called "traditional" method and formerly called "méthode champenoise". This means that the foam is caused by a second fermentation in the bottle, applied to a basic wine.
