Look Inside The Colares Cooperative

Presented here is a detailed look into a historic winery, the Adega Regional de Colares outside of Lisbon, Portugal. "So we ferment in temperature controlled stainless steel. Some of the red, because we don’t have enough room in the stainless steel, we still use those big wood vats over there. We call them ânforas; we still use them for some of the table wine. Of course, we have no temperature control with them," said Colares enologist Francisco Figueiredo.
