Job Description
Brooklyn Kura is New York’s first sake brewery located at Industry City in Sunset Park, Brooklyn. We have recently expanded to a larger production facility and are growing our team. We are technically a winery and many of our processes are similar to wine making. As an assistant sake brewer (kurabito), you will be involved in every aspect of sake making: from rice washing/soaking, steaming, koji making, shikome, moromi stirring and monitoring, pressing, filtration, bottling, and most importantly, cleaning. You will gain the knowledge and skills to help create world-class junmai sake by working closely with your teammates.
Responsibilities
• CIP of tanks, presses, machinery, and more
• Bottling line operation and maintenance
• Sake press operation and cleaning
• Sake filtration and transfers
• Measuring daily samples for specific gravity, ABV, glucose, total acidity
• Constant cleaning and sanitation of work area and floors
Position Requirements
• Strong and cooperative work ethic, multitasker
• Must be 21 and able to read, write, and speak English
• Ability to follow all safety and sanitation procedures
• Ability to lift 50# repeatedly
• Ability to stand for 8-10 hours a day
• Ability to work on 10’ platforms
• Experience with tri clamp sanitary fittings, pumps, hoses, transfers, filtration, pallet jacks
• Basic Excel and record keeping skills
• Reliable and dependable. Punctual.
• Bottling line and pasteurization experience a plus
