Job Summary
The Assistant Winemaker supports the Director of Winemaking in all aspects of wine production for our lifestyle brand, C.K. Mondavi & Family. This hands-on role is responsible for ensuring high-quality wine from grape to bottle through active involvement in daily operations, including fermentation management, cellar supervision, inventory control, bottling, and barrel maintenance. The position also plays a key role during harvest and collaborates cross-functionally to monitor production processes, maintain efficiency, and uphold our commitment to quality and customer satisfaction.
Essential Duties and Responsibilities include but not limited to the following:
Manage day-to-day operations for winemaking, ensuring precision and timely execution by collaborating with production, planning, lab, QC, and winemaking teams
Assist in the production of CK still wines alongside the winemaking team and cellar staff
Maintain a focus on detail, organization, and quality throughout all aspects of the role
Provide support during harvest monitor analysis, create work orders
Oversee monthly wine analysis reviews and create work orders as needed
Foster a customer-focused culture by maintaining strong client relationships and ensuring their protocols are followed during production
Evaluate and improve current processes with a focus on quality and efficiency
Organize and actively participate in winemaking trials
Assist in lab and QC analysis, sampling, blending
Actively participate in harvest activities, including crushing, fermentation, and blending evaluations
Maintain detailed and accurate records of wine production, bottling, lab results, and inventory using Vintrace or similar software
Maintain accurate bulk wine inventories and support compliance with label and regulatory requirements (TTB/BATF)
Support and contribute to safety meetings and training programs
Other duties, as assigned
Qualifications (work experience, preferred skills and education):
Degree or certificate in enology, viticulture, or related field
3+ years of hands-on experience in winery operations, including cellar work, lab analysis, production coordination and harvest support with a track record of increasing levels of responsibility
Strong passion for wine and a commitment to teamwork
Excellent communication, organizational, and attention-to-detail skills
Ability to work flexible hours, including extended hours and weekends as needed
Able to prioritize workload and efficiently handle deadlines with focused attention to detail
Must be able to lift 50 lbs., intermittently
Must be eligible to work in the US
