Cellar Master
JOB RESPONSIBILITIES:
Responsible for the direct supervision of cellar staff and activities, in accordance with Dutton-Goldfield winemaking and operational policies, to ensure maximum productivity, efficiency and the highest quality of all wines produced. The Cellar Master will be the point person for all facility-related maintenance, repairs, and emergencies. A strong background in facility management is highly preferred.
CELLAR ORGANIZATION
• Oversee the organization of daily, weekly, and monthly workflow.
• Assist with writing and updating of winemaking procedures manual, and train cellar staff on those procedures.
• Maintain winemaking supply inventory and order supplies, including gases, winemaking materials, safety supplies, etc., as needed.
• Delegate cellar job duties according to most efficient flow in the winery.
• Ensure proper writing and recording of work orders.
• Acts as Safety Officer in the winery, responsible for upkeep of winery safety manual and conducting regular safety meetings with team.
• Assist in planning and execution of bottling runs. Manage temporary workers during bottling runs.
• Manage cellar activities, with an eye toward the highest quality standards in winemaking, including: Filtrations, Blending, Topping and other barrel work, General cellar work, sanitation, Sampling, wine transfers
• Assist with the hiring of harvest interns
• Optimize the physical arrangement of barrels and tanks throughout the year for efficiency of work.
• During harvest, manage temporary workers, organizing shifts and duties
• Assist in the training of all cellar workers
• Perform and assist others with lab and cellar work whenever needed
• Perform other tasks as needed – this is a small organization, and a willingness to chip in where needed is essential
CELLAR EQUIPMENT & MACHINERY
Familiarity with use and general maintenance of all cellar equipment to include:
• All crush pad equipment including: presses, belt conveyors, destemmer, sumps, pumps
• Forklifts
• Centrifugal, positive displacement and air pumps
• Filtration:, pad filters, cross-flow, Reverse Osmosis units
• Develop and adhere to a preventative maintenance program
• Maintain all cellar equipment in clean, working order
• Ongoing barrel and wine inventory, and work record upkeep.
• Winery heating, cooling, power, compressed air, and wastewater systems.
• Repair of hoses, valves, tank mixers, fittings, and other fittings/winemaking tools.
Knowledge, Skill and Experience:
• 3-5 years of related experience and/or training
• Ability to define problems, collect data, establish facts, and draw valid conclusions
• Must be able to speak, read, write, and understand the primary language(s) used in the workplace
• Must be at least 21 years of age
• A valid driver’s license with a social security card OR a passport is required
Physical Requirements:
• Must be able to climb stairs and work at heights
• Must be able to lift and carry 50 pounds on a repetitive basis and work standing up on concrete surfaces for extended periods of time
• Must be able to work in cold, damp and dark cellar environment
• Must be able to work up to 6 days per week, 12 hour days during harvest.
