About the Role

The Sous Chef works in unison with the Hospitality team to execute immersive, inspiring, and unparalleled experiences for proprietors, associates, guests, and members. This role requires a person who possesses not only excellent cooking skills, but also the drive and passion to execute at the highest level and continually raise the bar for the wine and culinary industry. The Sous Chef works closely with the culinary team to develop a unified core of professionals who run a well-organized and efficient kitchen, preparing products of the highest quality and contributing to an environment where excellence and passion flourish.

Work is primarily performed in a tasting room, hospitality, or event setting, where exposure to fluctuating indoor and outdoor temperatures, crowds, and noise levels may occur. The role may require working a variable schedule, including weekdays, weekends, holidays, and some evenings, with longer or irregular hours during peak seasons and special events. Employees may occasionally work outdoors during events or at offsite locations. Occasional travel may be required.

Key Responsibilities
* Collaborate on and execute innovative seasonal menu items for daily menus and private events, both on-site and off-site.
* Source compelling, high-quality, and unique ingredients to support competitive differentiation.
* Execute and support best-in-class operational processes designed to increase performance and execution.
* Prepare food to consistent standards in a timely and efficient manner.
* Maintain clean, organized, and well-stocked kitchen, prep, and storage areas, during opening, throughout service, and at close-down.
* Set up stations according to menu needs and ensure readiness for service.
* Use proper product rotation, including first in-first out practices, while checking for quality and preventing food waste.
* Perform correct cooking techniques to ensure quality and consistency.
* Execute internal and external events with precision.
* Place accurate orders for food and supplies and receive, inspect, and properly store vendor deliveries.
* Manages labor and hours according to direction from kitchen leadership.
* Maintain an organized and clean work area.
* Execute processes for the culinary team to achieve a high level of daily execution.
* Support the development of new concepts and locations, including menus, facilities, and processes.
* Support maintenance plans and maintain property, facilities, and equipment.
* Ensure the highest possible level of sanitation practices and adherence to safety procedures.
* Develop, train, and coach the culinary team

About you
* Strong understanding of kitchen equipment use, operation, and care, with essential knife skills and knowledge of cooking terms
* Ability to work efficiently while following company standards, with or without immediate supervision
* Holds required state and county sanitation certifications
* California Food Handlers Certification (required)
* Must be at least 21 years of age
* Bilingual English/Spanish is a plus

These figures represent what we reasonably expect to pay for this position, but the actual compensation offered will depend upon numerous job-related factors, including but not limited to candidate qualifications, skills, experience, education, location, and alignment with market data. Our expectation is that the incumbent will work out of our Paso Robles, Daou location. If the incumbent works out of another location, the wage rate may fall above or below this range. Treasury reserves the right to modify the range in the future.
