We are looking for a talented Enologist to our Cakebread family. Under the direction of the Assistant Winemaker, the Enologist conducts, analyzes, and oversees all laboratory operations and quality control procedures. Responsibilities include, but are not limited to: collecting samples, analyzing samples, entering analytic data into Vintrace, maintaining wine analysis data documentation, monitoring and reporting analyses beyond acceptable QA/QC parameters, preparing various reports on findings and recommendations, and ensuring the lab is orderly and safe at all times.

What we will ask you to do:
•  Develops, implements, and maintains good laboratory procedures and practices in order to meet and support winemaking goals and objectives
•  Carries out all laboratory analyses including the common analytical components of sulfur dioxide, volatile acidity, total acidity, pH, alcohol, haloanisole, halopehnols, IBMP, 4EP/4EG, smoke compounds, malic acid and residual sugar, as well as any other sensory compounds in wine which require more advanced technical analysis
•  Performs data entry of all analytical results in Vintrace
•  Samples barrels and tanks as directed by Assistant Winemaker and Winemaker
•  Prepares fining trials and benchtop lab blends
•  Sets up and evaluates cork sensory trials, prepares group soaks for haloanisole screening on the GC-MS/MS, and maintains records for purchasing cork to meet bottling schedules
•  Screens all new barrels for moisture content, as well as haloanisoles and halophenols using the GC-MS/MS
•  Assists Facilities with monitoring wastewater ponds and maintaining up-to-date and accurate records of data, including weekly, quarterly, and yearly reporting

Harvest Activities

•  Assists in harvest activities, including tank and barrel sampling and fermentation checks (Brix and temperature)
•  Monitors fermentations and malolactic fermentations and alerts Assistant Winemaker and/or Winemaker of potential issues
•  Processes grape samples and analyzes juice for brix, pH, acid profiles, nitrogen compounds and IBMP
•  Performs microbiological evaluation of yeast propagation system and confirms inoculum volumes for cellar work orders
•  Prepares addition work orders including, but not limited to,: enzymes, yeast, nutrients, and sulfur dioxide

What you should bring to the table:
•  Bachelor’s degree in Viticulture and Enology or related science degree
•  Minimum of 3 years of Enologist experience in a winery lab with a minimum 2 years supervisory experience
•  Working knowledge of scientific equations and ability to calculate unknown concentrations and volumes
•  Working knowledge of Vintrace or other Inventory/Data Management System
•  Commitment to excellence and high standards
