Job Description:

Location: Oakville, CA (Oakville Grocery, Napa Valley) | Full-time | Variable schedule (incl. weekends, evenings, occasional OT)

Why The Culinary Role Matters

As Culinary Manager, you'll roll up your sleeves and work side by side with your team-leading by example in deli prep, ingredient portioning, sandwich assembly, charcuterie, salads, sauces, and grab-n-go packaging. You're in the trenches, not watching from afar.

What The Culinary Will Do:

•  Daily Prep Leadership:

•  Chop, portion, and prep meats, cheeses, produce, grains, sauces, dressings, and sandwich components
•  Oversee cold-food production: charcuterie boards, salads, grab-n-go items, and catering trays-while pitching in yourself
•  Food Quality & Safety:

•  Maintain high hygiene standards: wash slicers, workstations, tools, and maintain cold storage temperature logs
•  Label, date, and rotate stock appropriately; sanitize daily to meet health regulations
•  Menu Execution & Costing:
• 
•  Craft menu items using local, organic, biodynamic ingredients; cost recipes accurately
•  Ensure Core-10 staples are always ready, plus 2 seasonal and 4 rotating dishes
•  Service & Guest Engagement:

•  Spend at least 30% of your time at the counter-serving guests, upselling, managing orders
•  Team Training & Development:

•  Train staff in knife techniques, portion control, sandwich assembly, plating, and food safety
•  Host prep demos, run regular huddles, and provide on-floor support

What The Culinary Manager Brings:

Essential:

•  3+ years in deli/prep food management or prep kitchen with strong deli focus
•  Advanced knife skills, slicing, portioning, plating, and production
•  Expertise in food safety, sanitation, and equipment handling
•  Ability and enthusiasm for hands-on prep and service
•  Strong leadership and guest interaction skills-customer-centric mindset
•  Intermediate English, basic Spanish; proficiency with POS/scheduling tools

Preferred:

•  Culinary training or degree
•  Experience with artisan or gourmet deli/prepared foods
•  Familiarity with Paycor or similar systems

Physical & Work Conditions:

•  Lifting up to 40 lbs, standing/walking long periods, working in varied indoor temperatures (warm deli, cool wine cellar)
•  Mixing hands-on prep and guest service in a fast-paced environment
