SENIOR FOOD & BEVERAGE MANAGER

Full-Time | Multi-Location Wine & Hospitality Leadership | New Mexico
Reports to: Director of Operations

Noisy Water Winery is seeking an experienced Senior Food & Beverage Manager to lead the performance, development, and growth of our tasting room and guest-facing operations across New Mexico.

This is a multi-location, manager-of-managers role for a wine and hospitality operator with strong F&B experience who understands that exceptional guest experiences and strong business performance go hand in hand.

You'll lead Tasting Room Managers and work with our hospitality and operations teams to drive sales and profitability, strengthen wine and food experiences, develop managers, and maintain high operating standards.

WHAT YOU'LL DO

Wine, Hospitality & Guest Experience

•  Champion a consistent, exceptional guest experience across Noisy Water locations.
•  Ensure teams have the wine, food, product, and hospitality knowledge needed to confidently engage guests.
•  Evaluate service, wine presentation, food offerings, merchandising, location presentation, and guest flow.
•  Review guest feedback and ensure concerns are addressed appropriately.
•  Collaborate with hospitality, culinary/F&B, and wine teams on training, menus, pairings, service standards, and guest experiences.
•  Oversee location standards and audits and drive improvements when needed.

Business Performance & Profitability

•  Own overall performance across Noisy Water's tasting room and retail locations.
•  Establish and monitor KPIs including sales, order count, AOV, bottle sales, discounts, labor percentage, and margins.
•  Identify performance trends and develop action plans when locations or metrics are off target.
•  Review P&Ls and budgets with Finance and translate results into operating plans.
•  Identify opportunities to grow revenue, improve profitability, control costs, and strengthen locations.
•  Evaluate menus, pricing, concepts, merchandising, and layouts with guest experience and financial performance in mind.
•  Lead seasonal sales strategies and evaluate events based on results.

Manager Leadership & Operations

•  Oversee, coach, and hold Tasting Room Managers accountable for location performance.
•  Establish clear expectations, priorities, and measurable goals.
•  Develop managers in leadership, hospitality, wine/F&B execution, communication, accountability, and business performance.
•  Lead weekly manager meetings and maintain consistent communication and follow-through.
•  Visit locations regularly to coach managers, observe operations, and identify opportunities.
•  Partner with HR on staffing, performance management, and employee relations.
•  Determine staffing levels and workforce needs by location.
•  Lead and support menu/F&B initiatives, tasting experiences, location refreshes, new concepts, and expansions.
•  Oversee routine retail purchasing and partner with Retail Operations on inventory needs.
•  Ensure locations follow company policies, safety and alcohol-service requirements, and operating standards.

TRAVEL & LOCATION

This is an in-person, multi-location position. Ruidoso, New Mexico is the preferred home base, and relocation assistance may be available.

Current locations include Ruidoso, Alto/Enchanted Vine, Cloudcroft, Albuquerque, and Red River, with Carlsbad planned for 2027. Travel varies based on business needs and may include overnight travel.

A company vehicle is available for approved business travel. Business-related fuel, lodging, and meals are covered according to company policy.

EXPERIENCE & QUALIFICATIONS

•  Management experience in wine, tasting rooms, hospitality, restaurants, culinary/F&B, hotels, or a related guest-facing environment required.
•  Wine-industry/DTC and multi-location leadership experience strongly preferred.
•  Experience managing and developing other managers strongly preferred.
•  Demonstrated success improving sales, labor, profitability, guest experience, or other measurable results.
•  Working knowledge of F&B operations and comfort with KPIs, budgets, and P&Ls.
•  Strong leadership, communication, organization, problem-solving, and follow-through skills.
•  Ability to travel regularly throughout New Mexico, including periodic overnight travel.
•  Availability during key weekends, holidays, events, and high-volume periods as needed.

ADDITIONAL REQUIREMENTS

•  Must be 21+.
•  Must obtain and maintain a New Mexico Alcohol Server Permit within 30 days of hire.
•  Valid driver's license, acceptable driving record, and reliable transportation required.
•  Ability to stand/move for extended periods and lift/carry approximately 40 lbs., with or without reasonable accommodation.
