The Pellegrini family are California wine pioneers, having been associated with every tier of the wine business since 1925 — as wine producers, growers, importers, and wholesale distributors. Originally planted in 1975, Olivet Lane has 60 planted vineyard acres, producing grapes for many renowned local wineries, as well as for our own boutique production under the Pellegrini-Olivet Lane brand. POSITION DESCRIPTION
The Enologist / Production Coordinator is a key member of the winemaking team, connecting the laboratory, cellar, and production operations. This hands-on role combines laboratory analysis, harvest coordination, production scheduling, inventory management, and work order oversight to ensure wines are produced efficiently and to the highest quality standards.
Working closely with the Winemaker, the Enologist coordinates production activities for both Pellegrini-Olivet Lane wines and custom crush clients. During harvest, this position serves as the operational hub for grape sampling, fermentation monitoring, laboratory analysis, production documentation, and communication across departments.
The ideal candidate is equal parts scientist, organizer, and production coordinator. They thrive in a fast-paced harvest environment, communicate effectively, maintain exceptional attention to detail, and are passionate about producing outstanding wines through technical expertise, accurate data management, and well-executed production planning.

DUTIES AND RESPONSIBILITIES:

•  Laboratory & Wine Quality
- Manage daily laboratory operations and analytical testing.
- Perform grape maturity sampling and analysis (Brix, pH, TA).
- Monitor juice and wine chemistry throughout fermentation and aging.
- Conduct blending, fining and filtration trials.
- Interpret laboratory data and communicate recommendations to the Winemaker.
- Monitor wine quality through sensory evaluation and analytical testing.
- Maintain laboratory equipment, calibration, supplies, and records.
- Coordinate outside laboratory analyses as required.
- Participate in blending sessions, sensory evaluation and quality review.

•  Inventory & Data Management
- Maintain accurate bulk wine inventories.
- Maintain bottled wine inventories.
- Enter and reconcile laboratory results and production records.
- Maintain winemaking software and production spreadsheets.
- Assist with costing, inventory reporting, and production forecasting.
- Coordinate additive inventories and purchasing recommendations.

•  Harvest & Production Coordination
- Assist with harvest logistics and crush scheduling.
- Prepare and manage production work orders.
- Coordinate cellar activities, including: racking, topping, barrel maintenance, sanitation, additions, filtration, bottling preparation.
- Monitor fermentations across multiple production lots and custom crush clients.
- Track daily fermentation data including Brix, temperature, and laboratory results.
- Coordinate work orders and production schedules.
- Assist with filtration and bottling operations.
- Help develop efficient cellar procedures and workflow improvements.

QUALIFICATIONS:
- 2-3 years of experience within a winery environment.
- Bachelor's degree in Enology, Viticulture, Chemistry, Food Science, Microbiology, Chemical Engineering or equivalent experience.
- Strong understanding of wine chemistry and laboratory procedures.
- Experience with wine production from grape reception through bottling.
- Experience coordinating harvest operations.
- Excellent organizational and project management skills.
- Strong written and verbal communication skills.
- Advanced Microsoft Excel proficiency.
- Ability to prioritize multiple projects in a fast-paced environment.
- Strong attention to detail.
- Experience with winery management software (Innovint)
- Forklift certification ready.
- Strong sensory evaluation skills.

PHYSICAL REQUIREMENTS:
- Lift up to 50 pounds.
- Stand, walk, bend, climb stairs and ladders throughout the workday.
- Work safely around production equipment.
- Work indoors, outdoors, and in varying temperatures.
- Ability to work extended hours, evenings, and weekends during harvest.
