Aperture Cellars is seeking a skilled and motivated Assistant Winemaker to support the Director of Winemaking in all facets of wine production. This role plays a vital part in crafting high quality, luxury wines and ensuring excellence across cellar operations, team leadership, production workflow, and compliance. The Assistant Winemaker will guide the cellar team, manage daily operations, and uphold our commitment to craftsmanship and safety.
Key Responsibilities
• Execute stylistic vision and quality standards across all phases of production including harvest, fermentation management, blending, aging, and bottling.
• Manage winemaking software, production records, lot tracking, and compliance documentation.
• Review and interpret wine chemistry; direct sampling and lab analysis.
• Maintain bulk wine inventory; oversee barrel maintenance.
• Lead daily cellar operations, supervising staff and harvest interns.
• Coordinate workflow, schedules, workorders, and communication across the production team.
• Recruit, hire, train, and develop cellar staff; maintain training records.
• Oversee departmental safety, OSHA compliance, audits, and training records.
• Schedule and coordinate bottling operations, packaging logistics, QA/QC, and materials management.
• Direct fruit processing, weigh tags, additions, and fermentation protocol execution.
• Maintain cellar sanitation, appearance, equipment upkeep, and supply inventory.
Required Qualifications
Education & Experience
• Bachelor’s degree in Enology, Viticulture, or related field.
• 5+ years progressive winery experience, including multiple premium harvests and proven management experience.
• Forklift certification; ability to obtain & maintain a QAC license.
Knowledge, Skills & Abilities
• Deep understanding of winemaking operations and sensory evaluation.
• Strong leadership, communication, and interpersonal skills.
• Proficiency in Microsoft 365 and winery database systems.
• Highly organized, adaptable, and capable of managing concurrent priorities.
Physical Requirements
• Ability to lift 50+ lbs; work at various heights; perform physically demanding tasks.
• Exposure to chemicals, hot/cold conditions, noise, and winery equipment.
Additional Requirements
• Valid California driver's license and clean driving record.
• Availability for extended hours during harvest and bottling.
