Production Manager / Enologist
Location: Napa Valley, California
Facility Type: Premium Custom Crush Winery
We are a premium custom crush facility located in the heart of Napa Valley, seeking a highly motivated Production Manager / Enologist to join our winemaking team. This position will work closely with the Director of Operations and Director of Winemaking to support all facets of wine production, with a strong emphasis on organizing cellar workflow, managing production data, and delegating tasks to the Cellar Master.
The primary goal of this role is to elevate the quality, efficiency, and consistency of our winemaking processes across all client programs.
Key Responsibilities
Production Operations
• Prior experience in premium winemaking or custom crush is required
• Coordinate and record scheduled wine movements and blending activities
• Manage empty barrel inventory, sales, and maintenance schedules
• Draft, review, and modify work orders in InnoVint for all cellar operations
• Execute and oversee all cellar operations, including:
- Harvest intake and processing
- Barrel movements
- Racking, blending, filtration, and bottling prep
• Ensure timely and correct execution of juice/must additions prior to fermentation
• Pull samples for sensory analysis and lab work
• Maintain and execute topping and analytical schedules for wines post-harvest
• Monitor fermentations daily to ensure healthy and timely progression
• Delegate and follow up on work orders with Cellar Master to ensure completion at ultra-premium standards
• Confirm all finished work orders are completed correctly and entered into InnoVint daily
Enology & Lab Oversight
• Proficiency in InnoVint is required — candidate must be comfortable writing and managing work orders and inventory
• Preferred: Ability to perform in-house lab analysis using FOSS WineScan and titrator systems
• Run monthly in-house analysis on all client wines and report results to clients/winemakers
Administrative Duties
• Maintain all production records in InnoVint, including:
- Wine movements
- Barrel and dry goods inventories
• Assist in refining and documenting SOPs and best practices in collaboration with winemaking leadership
• Ensure accurate documentation of all wine movements and finished work orders
Education & Professional Experience
• Bachelor's degree in Enology, Fermentation Science, or related field preferred (Relevant experience will be considered in lieu of formal education)
• Minimum of six vintages of winemaking experience in an ultra-premium or premium custom crush environment
• International harvest or full-time production experience is a plus
• Proficiency in Microsoft Office (Excel, Word, Outlook) required
• High-level proficiency with InnoVint is essential for success in this role

• Ability to understand and follow written and verbal instructions in English
• Professional communication skills (written and verbal) in English
• Bilingual in English and Spanish is preferred
• Ability to manage multiple client programs in a fast-paced, dynamic environment
Physical Requirements
• Ability to accurately evaluate wine characteristics through tasting and smelling
• Ability to stand, kneel, stoop, climb, and lift up to 50 lbs
• Comfortable working in various winery environments, including caves, outdoor areas, and varying weather conditions
• Ability to sit at a computer for extended periods and operate a keyboard and mouse
• Visual acuity and color perception sufficient to perform winemaking tasks
• Clear, audible verbal communication and normal hearing ability required
