Position Summary
This RTD/OTS Production Winemaker position will play a critical role in the day-to-day operations of the Winery. The primary responsibility will be converting "Ready to Drink" and "Other than Standard" formulations into production blends that meet the packaging schedule. There will be secondary responsibilities along the same lines of finishing wines to bottling. This position will work closely with other departments (R&D, Lab, Operations, Maintenance and Administrative) as well as other CBI Operations facilities to meet the production needs of our brands.
Responsibilities
* Convert formulary instructions for RTD/OTS type products into production blends that meet the packaging timelines
* Work closely with the Product Innovation Team to provide input on RTD formulations
* Recognize the different formulary sensory attributes. Able to make production adjustments to hit the sensory targets
* Understand the use and storage of flavor ingredients and spirits
* Provide leadership in production operations for RTD/OTS type products
* A good understanding of state, and federal government regulations, specifically TTB and state regulations on alcoholic beverage production, distribution, and packaging
* Execute blend to bottle winemaking operations to meet production demands
* Assist in the execution of all harvest related activities from grape through blending
* Review bulk wines and spirits for suitability as blending components
* Review monthly samples of wine and products to ensure they are sound and aging appropriately. Act to mitigate any spoilage
* Plan aging and processing steps required to meet shipping deadlines
* Collaborate with all peer winemakers to ensure quality of their brands and wines
Minimum Qualifications
* Bachelor's Degree in Food Science, Enology, Chemistry, or related field
* 5 - 8 years' experience in RTD/OTS products
* Practical knowledge of medium to large scale cellar operations
* Must understand all laboratory analysis used for winemaking and the impact of the results
* Knowledge of Government Regulations- specifically TTB and state regulations on alcoholic beverage production, distribution, and packaging
* Able to organoleptically evaluate wines, spirits, and flavored products
* Strong organizational, planning, and presentation skills
* Ability to use different types of business software and MS suite products
Preferred Qualifications
* Knowledge of sparkling winemaking
