Cellar Master
DUTIES AND RESPONSIBILITIES:

SAFETY
•  Assist in implementing and maintaining the Injury Illness Prevention Program, Chemical Handling & Sanitation Protocols, and Confined Space Entry Program
•  Foster a “Safety Culture” within the Cellar
•  Adhere to all Federal and State safety regulations and mandates

MANAGEMENT ASSISTANCE
•  Assist with Weekly Work Schedule for Cellar crew as needed by the winemaking team
•  Demonstrate Character Leadership
•  Train Cellar Workers on Standard Operating Procedures
•  Assist or comment in annual review process for each cellar person
•  Assist in Skill Development training programs specific to Individual Cellar Operators

GENERAL CELLAR ASSISTANCE
•  Assist in management of daily production tasks
•  Train Cellar Workers on Standard Operating Procedures
•  Instruct team members on the safe and proper use of all equipment and techniques
•  Assist winemaking team to develop a weekly production schedule
•  Monitor Work Orders for timely completion.
•  Review completed WOs for accuracy and completeness, Enter Work Order data to Database, advise winemaking team of any discrepancies, reconcile.
•  Monitor Cellar for cleanliness and address issues
•  Assist in bulk wine receiving and scale house operations
•  Collaborate with Lab to make sure samples needed are delivered appropriately
•  Review SOPs routinely to ensure efficiency, accuracy, and adherence
•  Assist Lab in maintaining inventory and organization of barrels, kegs, racks and bungs
•  Assist Lab with maintaining barrel cleanliness and upkeep of empty barrels


CELLAR EQUIPMENT & MACHINERY
Familiarity with use and general maintenance of all cellar equipment to include:
•  All crush pad equipment including: presses, belt conveyors, destemmer, sumps, pumps
•  Forklifts
•  Centrifugal, positive displacement and air pumps
•  Filtration: lenticular, pad filters, cross-flow, Reverse Osmosis units
•  Maintain all cellar equipment in clean, working order and in conjunction with Maintenance,

CELLAR SUPPLIES
•  Actively monitor supplies inventory
•  Place supplies orders as needed
•  Assist lab with lot tracking on all cellar supplies
