Service Captain

Perle´e

Dundee, OR

Apply

Job Description:

Perle´e is a dedicated sparkling wine estate that is experience focused— and we are building a team as extraordinary as the wines we pour. We’re looking for a Service Captain who defines excellence, then surpasses it.

Perle´e is rooted in a hospitality-first approach to wine estate experience — where every detail is considered, every guest is known, and every visit is worthy of remembrance. Our intimate experience welcomes a maximum of 36 guests per day, Wednesday through Sunday, guided by a culinary team carrying 3-Michelin-star credentials. We are purpose-built for those who know the difference — and aspire, alongside us, toward recognition that matters: Michelin stars, James Beard distinction and ambition to become a Krug ambassador property.

WHAT YOU'LL DO
Run exceptional, high-touch tasting experiences from arrival to farewell — meaningful and memorable are your floor, not your ceiling.
Curate each guest's journey with intentional timing, genuine conversation, and impeccable attention to detail.
Continue the experience after guests leave: handwritten notes, thoughtful email correspondence, diligent preference tracking.
Keep all service spaces immaculate and guest-ready at all times.
Actively contribute to evolving our SOPs and service standards — your perspective shapes the Perle´e experience as much as your execution of it.
Collaborate daily with our culinary team to deliver seamless food-and-wine pairing experiences.
Represent Perlée with professionalism in attire, communication, and conduct.
Stay flexible — each service day has its own rhythm.

WHAT WE'RE LOOKING FOR
You understand that luxury hospitality is the art of active, intentional curation — and you bring that sensibility to every interaction.
You have a constant drive to deepen your global wine knowledge.
You can stand 8+ hours a day and lift up to 40 lbs; stairs are not an obstacle.
You're comfortable with Microsoft Suite and/or Google Drive.
You can commit to a Wednesday–Sunday schedule and special events as needed.
You hold an OLCC Server Permit (or can obtain one) and an Oregon Food Service Permit.
You must be 21 or older.

PREFERRED BACKGROUND
3+ years in luxury hospitality — Michelin-starred restaurant, ultra-premium winery, or equivalent.
Wine knowledge at WSET Level 2 or beyond.
Advanced familiarity with global cuisines and cooking techniques.

WHAT WE OFFER
Ongoing learning and development, including wine education support.
The opportunity to help establish a new standard of excellence in American sparkling wine — and grow alongside the recognition that follows.
