Position Overview:
The Donum Estate is currently seeking a dynamic and experienced Hospitality Manager to join our team. Reporting directly to the Sr. Director of Hospitality, this critical role is responsible for the overall Tasting Room and staff.
The Tasting Room Manager leads the daily execution of the guest experience within Donum’s hospitality spaces. This role serves as the primary leader and point of contact for the tasting room team, ensuring that all guest interactions reflect Donum’s Forbes-level standards of service, brand presentation, and operational excellence. The Tasting Room Manager is hands-on in leading daily service, overseeing staff scheduling, managing TOCK reservations, and ensuring the tasting room operates smoothly from opening to closing.
Leadership & Team Management
• Lead the daily hospitality team; set expectations for service standards and hold team members accountable.
• Address all employee relation issues in a timely and appropriate manner.
• Create and manage tasting room schedules to ensure proper coverage for daily tastings and events.
• Conduct pre-service briefings, lead by example during service, and provide ongoing coaching and feedback.
• Partner with the Director of Hospitality to ensure staff training aligns with Donum’s brand and guest journey.
Guest Experience & Reservations
• Oversee all TOCK reservations for daily tastings; assign hosts, manage guest flow, and maximize table utilization.
• Support the Guest Services team with real-time communication regarding guest arrivals, special requests, and membership opportunities.
• Conduct tastings as needed, particularly for VIP guests or overflow coverage.
Operations & Inventory
• Oversee tasting room opening and closing procedures, ensuring all spaces are guest-ready, organized, and brand-consistent.
• Manage daily wine inventory, including pours, open bottles, and guest pour standards.
• Collaborate with the Hospitality Lead on weekly wine orders and complete monthly inventory counts.
• Work with the Facilities Director to ensure the Donum Home is in working order and coordinate any maintenance issues.
• Maintain cleanliness, upkeep, and presentation of all hospitality spaces.
Collaboration
• Partner with the Private Experiences Manager on private tastings and events.
• Work closely with the Culinary and Operations teams to ensure all service components (canapés, logistics, and wines) are aligned for daily execution.
• Backup the Operations Manager when needed. Ensure knowledge of systems are up to date.
• Support events and special activations as needed.
• Cultivates excellent, clear, and productive working relationships with our team members, vendors, and other key partners in our business
Additional Responsibilities:
• Represent Donum Estate in the broader wine and hospitality industry, establishing the winery as a destination for luxury experiences and forging relationships with key partners and vendors.
• Monitor industry trends and competitors to keep the winery’s offerings fresh, innovative, and ahead of the curve, integrating emerging trends into new experiences and offerings.
• Ensure that all health, safety, and legal regulations are adhered to in the execution of events and guest services, maintaining a safe and welcoming environment for all guests and staff.
• Follow and adhere to all company policies and procedures and safety protocols.
• Ensure staff adhere to all safety guidelines and policies.
• Ensure staff is up to date with training and certifications.
• Ensure timecards are reviewed and approved in the required timeframe.
