Small winery in Lake County has custom crush room for small 1- to 12-ton lots. We do not have a Carlsen crush pad, interns, AP space, a "cellar crew" or fancy equipment. What we do have is a consistent 90+point winemaking history through hands-on work and affordable attention to detail. We are not setup for reductive whites (no tropical SB for example) but are great with all reds, orange/amber, and heavier whites. We are comfortable with both technical or very low input winemaking. Bottling is also a possibility for small lots. If you are stuck with unsold fruit or have a private label project, we might be able to help.
