Beautiful Sauvignon Blanc hand picked. Whole Cluster pressed.No ML. 0% RS, DRY. Stainless Steal cold 50-55 degree fermentation. Small portion went to New French Oak at low brix to dry (for mid-palate mouth feel). Stored in topped of 550 Stainless Steal, adjusted monthly. Cross-flowed filtered, heat stable Was kept for kegging program for on tap for a high end restaurant BTG that wasn't needed do to Covid. Wine has a great Lively fruity Citrus, grapefruit nose and bright acidity. Not a grass SB.
