Most recently, Mavrik rolled out it's counterintuitive improvement to smoke taint removal. As smoke taint continues to elude researchers, other services try to remove more and more flavors and aromas in hope of getting the right ones. Contrarily, Mavrik has, since first offering smoke taint service in 2008, continued to narrow it's process to remove fewer and fewer components other than smoky aromas and flavors. This led to the recent breakthrough which avoids over-processing or indiscriminately stripping wine.
This emphasis on reinventing familiar services has paid off in longevity for Mavrik. “Our biggest innovation, removing alcohol without heat or high pressure (2009), remains our most popular. Low pressure VA removal (2010) and smoke taint removal (2008) are close behind.” added co-founder Mariana Brown.
