IQ 2019 Trial Feature: Use of Brett Versus Saccharomyces for Pinot Gris Primary Fermentation

Understanding that trials are the embodiment of winemakers and grapegrowers pursuits of quality, the editors of Wine Business Monthly have selected 20 trials to feature at this year’s Innovation + Quality (IQ) conference. Click here to register for IQ.

The two-day event will take place May 22-23, 2019 at Silverado Resort & Spa in Napa Valley. At the conference, winemakers who have conducted new trials will pour their wines so attendees can taste the results.

In the weeks leading up to the show, we'll feature some of the trials being poured.

Use of Brett Versus Saccharomyces for Pinot Gris Primary Fermentation
11:30 a.m. – 12:30 a.m., Booth C

Winery Name: Merisi Wines
Trial Objective: This trial explores the different positive characteristics provided by Brettanomyces yeast.
Trial Description: Two tons of 2017 and 2018 Pinot Gris were hand-picked, pressed and fermented in barrel (using 58W3 Scott Labs yeast). The wines were aged and stirred on their lees for six months prior to bottling. In the quest to reveal positive attributes of Brettanomyces, 60 gallons of each of these vintages were siphoned off post-pressing/pre-fermentation and inoculated with WLP645 Brettanomyces Claussenii (from White Labs) for primary fermentation. The wines were aged for three months and bottled for freshness.

Lot 3: 2018 Pinot Gris w/ Saccharomyces
Lot 4: 2018 Pinot Gris w/ Brettanomyces

Trial Conclusion: At this point in the research, the results are purely sensory and therefore subjective.
