DESCRIPTION: PN4 was isolated by the Institute of San Michele in the Trentino, Italy. PN4 is successful in challenging environmental conditions. This strain of malolactic bacteria can survive in low pH (3.0-3.1) and high alcohol (up to 16%v/v) conditions. PN4 is tolerant to 14°C (57°F) and to a total Sulfur Dioxide level of 60ppm. This option is presented in lieu of direct inoculation where the winemaker can acclimatize the bacteria to their specific wine conditions.
