Our Enologist supports this vision by applying scientific expertise and practical skills in our winemaking process to consistently produce the high-quality wine that meets the high PEJU standards. As a member of our Production team, the Enologist supports PEJU’s winemaking operations and assists in maintaining the health of our wines. This position will be responsible for controlling the quality of the wine including supervising lab work, reviewing lab analysis, quality assurance/control, and providing new research and latest trends in winemaking. The Enologist ensures that each step in production enhances the wine’s flavor, aroma, and overall profile, and adheres to best practices for safety, sustainability, and quality assurance. Other duties as assigned.
ESSENTIAL FUNCTIONS:
• Works under minimal supervision to train interns and lab technicians to process and analyze wine, juice, and vineyard samples from vine to bottle.
• Responsible for re-occurring wine maintenance and lab analysis within the cellar. This includes such items as biweekly headspace oxygen and tank SO2 maintenance.
• Recommend methodology for increasing lab efficiency.
• Collaborate with Winemaking on evaluating wine and assisting in creating laboratory bench trials.
• Take the lead on research for winemaking. Provide new ideas and suggestions to innovate.
• Lead in organizing and scheduling trials relating to winemaking.
• Investigate and resolve wine quality issues; provide recommendations to the team.
• Manage, document and control quality assurance and quality control programs including; the development of procedures, quality specifications and benchmarking for production and laboratory.
• Recommend new advances to in order to maximize wine quality at every stage of the process.
• Responsible for maintaining bottling quality control (both pre and post-bottling) by performing standard checks and analyses and completing required records.
JOB REQUIREMENTS/QUALIFICATIONS:
• BS in Enology, Fermentation Science, Biological Science, Chemistry or equivalent preferred, associate degree considered with sufficient work experience.
• Minimum two years full-time lab experience.
• Commitment to excellence and high standards of winemaking. Wine knowledge is necessary.
• Excellent written and oral communication skills.
• Strong organizational, problem-solving, and analytical skills.
• Ability to manage priorities and workflow.
• Versatility, flexibility, and a willingness to work within constantly changing priorities with enthusiasm.
• Capable of working autonomously and collaboratively across diverse teams
• Ability to work on complex projects with general direction and minimal guidance.
• Demonstrated ability to calculate figures and amounts.
• Working knowledge of statistical analysis of data, laboratory instrumentation and troubleshooting, and wine laboratory analysis.
• Ability to read, analyze, and interpret technical procedures.
