Brian Arden Winery is a small, family run winery in Calistoga. We seek to provide excellent service in a comfortable, relaxed atmosphere. Our goal is to have the friendliest staff in the valley, to make our guests feel at “home”, and provide a unique experience. Brian Arden Winery is seeking a highly skilled Executive Chef who can execute all aspects of our food program. The Executive Chef would have the ability to create their own menus, as long as they align with our current seasonal, fine dining style. Executing the menu for club parties, private events and other special experiences would also be expected. This position is highly visible to the public- the kitchen is open, and every patron who walks through the door interacts with the chefs. Candidates must understand that you are “on-stage” at all times.
Duties will consist of:
Designing and executing five course menus for groups of up to 10 guests
Pairing each course with a specific Brian Arden Wine
Sourcing ingredients from local purveyors and our on-site garden including using eggs provided by resident chickens
Engaging with guests, explaining each dish and the pairing of the wine selected
Working alongside our tasting room team to provide an excellent guest experience during the food and wine pairing
Work with the team to develop menus for Club Parties, Winemaker Dinners and other special events, and implement those menus
Designing and prepping food for our “Small Bites” menu
Preparing food to order off of the “Small Bites” menu and assembling Cheese and Charcuterie Board for Private Tastings
Dishwashing, glass washing/polishing and other similar tasks
Maintaining a clean and organized kitchen area, including coolers, freezers, and work station
• 2+ years experience in a fine-dining restaurant or winery kitchen
• Demonstrate a professional demeanor in all circumstances
• Exceptional customer service and sales skills
• General knowledge of wine and food pairing
• Ability to work with minimal supervision
• Must be at least 21 years of age
• Ability to lift and carry 50 lbs
• Ability to stand on one’s feet for extended periods of time
• Self-starter with the ability to multi-task and work in a fast-paced environment
• Able to work weekends and holidays
Five days per week, likely days off are Tuesday and Wednesday with some flexibility. Hourly compensation plus bonus.
