2011 Barrel & Oak Survey Report: Barrel Hygiene Update and New Trends in Oak Adjuncts

More impingement cleaning with less flow, more steam and more oak enhancements

  We first surveyed wineries about their barrel hygiene programs in 2007, and so it was time to see what has changed. We asked winemakers about washing equipment, use of steam or ozone, water temperatures and types of cleaning heads. Of particular interest were questions targeted at water usage and whether wineries were actively recycling. We also asked about purchasing plans.
