We first surveyed wineries about their barrel hygiene programs in 2007, and so it was time to see what has changed. We asked winemakers about washing equipment, use of steam or ozone, water temperatures and types of cleaning heads. Of particular interest were questions targeted at water usage and whether wineries were actively recycling. We also asked about purchasing plans. The good news is 45 percent of mid-sized wineries said they planned to buy more barrels this year than last. ...
