At Sebastopol-based Vinovation, Inc., the walls tell stories. Literally. In one room, the company's co-owner and founder, Clark Smith, has written all over them, a lengthy, well diagrammed narrative illustrating various stages of the winemaking process as well as the chemical reactions that take place when a sip of Cabernet arrives on someone's palate.
