Last year at this time I chose to discuss matching yeast strains with Syrah due to its growing popularity and that it was more of a stylistic unknown than the "big three" varietals of Chardonnay, Cabernet Sauvignon and Merlot. This, combined with the rather broad range of climates in which Syrah is being planted, has meant that no particular winemaking style has thus far become the dominant style in places like California and Washington where Syrah is establishing significant footholds...
