A Canadian surgeon is cutting into the barrel trade. Jim Hedges has set up Canadian Oak Limited to produce wine barrels from wood native to the Niagara region. His barrels are generating excitement as several Niagara wineries released wines aged in them over the last year.Derek Barnett of Lailey Vineyard leads the pack.
