With so many important decisions to be made when planting a vineyard, it is impossible to pick one that is singularly most important. Regardless, rootstock selection would be high on the list of relative importance. Trellises can be modified, scion varieties can be grafted over, vines can be interplanted (yuck!), but rootstocks cannot be changed over.
