Given the smooth sailing of 2012’s warm summer in California, this news might be a year too late for some wineries. But there is a relatively new type of fermentation tank that recirculates CO2 for greater extraction. Developed in 1997 in Italy, the Ganimede tank stockpiles CO2 and allows winemakers to release it at will to break up the cap of grapeskins.
