Barrels: Dargaud & Jaegle, Barrel Associates International
Description: Crafted in the Burgundy region of France, from the highest quality oak, Dargaud & Jaegle barrels are known for their sweet character and elevation of fruit. Widely used on Burgundian varieties, such as Pinot Noir and Chardonnay, they are quickly gaining a reputation for adding spice and complementing the tannin structure of Bordeaux- and Rhone-style wines. The top-of-the-line Marcel Cadet barrel is built from three-year seasoned oak from the most respected forests in France. Produced in limited quantities, this barrel is a great choice for any winery's flagship wine. Barrel Associates International's American Oak barrels are built in three different bending methods: Classic Fire-bent, Premium Water-bent and the innovative Deep Toast. Each method provides its own flavors and aromas to the wine and can be tailored to the individual wine style. Widely used in the U.S., Barrel Associates International barrels are also widely used in Australia as a complement to Shiraz. These barrels are also available in 265- and 300-liter formats.
Difference: Waterbending of both the Dargaud & Jaegle and the Barrel Associates Barrels offers another element to the "Spice Rack" ideal of barrel use. Adding sweetness and texture, without the harsh wood tannins often associated with fire-bent barrels, these barrels add complexity and layers to the winemaker's best effort. The Deep Toast barrel is a proprietary method for adding the best components of water-bending and fire-bending to the barrel building process. Deep Toast barrels provide elevated levels of vanillin and guaiacol as well as the creme brulee/caramel components.

NEW Total Quality Control
Description: As part of Gamba's commitment to Total Quality Control, the cooperage has completed certification for Brettanomyces-, Tribromoanosal- (TBA) and Trichloroanisole- (TCA) free barrels. The independent auditor will continue periodic random sampling of raw stave wood to comply with certification and insure the highest quality possible. In addition, all barrels are heat-shrink wrapped prior to shipment in order to eliminate the possibility of contamination during transit.
Difference: Fabbrica Botti Gamba has been family-owned and operated continuously for 215 years. The Italian cooperage is located in the Piedmonte province of Northern Italy. Gamba crafts premium barrels, upright wooden tanks and fermenters, casks and puncheons. The annual barrel production is approximately 10,000 worldwide. It is the only Italian cooperage distributed in the United States.
Gamba sources tight-grain, forest-specific French, American and Eastern European Oak and exclusively offers 36-month, naturally air-dried barrels. During the individual toasting of the barrels, Gamba utilizes an infrared monitoring system to regulate the toast temperature and duration. The slow toast has been proven to be more homogeneous and promotes deeper penetration into the stave. This process reduces blistering, and the result is a sweeter toast that softens the aromatic compounds.

Description: The new Perle Blanche barrel is specifically selected and toasted for accenting a wine's fruity and spicy character. Difference: This selection of wood and toast follows generations of experimentation by the Nadalie Family in France. Barrels are available now for experimentation before committing to next year's barrel order.

NEW Tonnellerie Meyrieux Fils
Description: Tonnellerie Meyrieux Fils is a Burgundian cooper known for their long toasting regime and innovative "chimney stack" aging process. These barrels produce toasty, rich, spicy flavors, and are well integrated without overpowering the fruit. For those wineries producing powerful Chardonnays and Pinot Noirs as well as extracted Syrahs, these barrels are the perfect choice. The Bordeaux shape is new for 2005.
Difference: Unlike the majority of barrels available today, these barrels are aged in open squares called "chimney stacks" which allow the wood to age more evenly and thoroughly than the closed stacking prevalent in Burgundy. Additionally, the toasting regimen is marked by having six small braziers arranged in a u-shape. The first barrel is placed over the first brazier where it remains for 15 minutes. It is then flipped upside down to the second brazier. A second barrel is added to the first brazier. Every 15 minutes the procedure is repeated, adding another barrel until there are six barrels on the six braziers. After 1 1/2 hours, the first barrel has made the tour of all six braziers and is removed.

NEW American Finesse Oak
Description: Rich Xiberta-Magrenan offers a special American oak selection with tighter grain carefully selected after years of research and development. The grain is much tighter than regular American Oak, adding more fine aromas during extended periods of time. The medium-grain tighter texture allows an excellent aging evolution, assuring a great extraction of polisacarids and tannins resulting in richer wines.
Difference: This barrel respects the fruit more than other American oaks. It adds tropical flavors, such as pineapple, vanilla and buttery aromas. In blind tastings, some winemakers have confused Magrenan American Finesse with French oak varietals.

European Oak (Référence Barrel): The Seguin Moreau RéférenceTM barrel is the result of scientific breakthroughs and experience gained over more than 15 years by the Seguin Moreau research team at the Bordeaux Oenology Faculty. It finds its place in their product line alongside the "Haute Futaie" and Russian Oak barrels. The Seguin Moreau Référence offers an alternative to French oak.
Russian Oak: Russian oak has always been highly considered among the sources of oak from the various regions of Europe and the world. Seguin Moreau identified the best sessile oak in the territory of Adygey in the Caucasus region and uses it for their Russian oak barrel. Similar in style to the French sessile oak barrels, the "Chêne du Caucase" barrels impart unique characteristics to wine.
Difference: In partnership with the Bordeaux Faculty of Oenology, Seguin Moreau has succeeded in shedding new light on the interactions between wood and wine. An example of this can be seen in their development of the U-StaveTM barrel, a traditional barrel with deep "u-shaped" grooves resulting in increased contact area between the wood and the wine. As further testimony to their commitment to research, Seguin Moreau has collaborated with Dr. Pascal Chatonnet over a 20-year period to study the evolution of wood compounds under specific temperature and humidity conditions. The result was the development of the controlled aging process whereby the evolution of the wood compounds can be regulated to compensate for irregularity of natural climatic conditions.
Other New American Oak Products: Hybrid barrel with French heads (also available in U-Stave barrel) and Appalachian oak coopered in the French style over an open wood fire, to achieve elegant flavors from toasting.

Barrels
Description: T.W. Boswell barrels include the Côte d'Or,Médoc and Legacy. Each barrel has a particular style designed to match specific wine types. The Côte d'Or is for Chardonnay and Pinot Noir while the Médoc suits Bordeaux style reds. The Legacy is an Old-World style barrel available in French, American or Eastern European Oak.
Difference: The cooperage hand selects premium oak from the prestigious forests of France and the U.S. The result is a stylish barrel with superb workmanship.

Zemplen Forest Hungarian Barrels
Description: The Vadai World Trade Ent. manufactures 1/2 to 1,000 liter sizes of Zemplen forest, Hungarian oak barrels made from the Quercus Petrea and Quercus Sessiles species of oak. These are the same tight-grained species as the Nevers and Allier species of oak in France. One-half liter to 50-liter sizes are available in plain or handcarved heads, including a stand, tap and bung. A handcarved crest or logo is also available. Barrels up to five liters are always beeswax lined to prevent wine, brandy or vinegar from changing its original flavor. Larger barrels, the 10- to 50-liter sizes, can be beeswax lined or toasted as requested. The barrels come in round or oval shapes, as well as in Hungarian, Bordeaux or Burgundy styles. Toastings are available according to winery preference.
Difference: What differentiates Vadai wine and brandy barrels from many other competitors is the Zemplen forest where the logs are harvested from. The forest has a unique mineral content that is imparted to the wine or brandy, creating an elegant taste. Winemakers in California, Oregon, Washington, Idaho, Arizona and Canada are currently using Vadai barrels. Additionally, winemakers are offered more flexibility in choosing their barrel due to the wide range of various sizes and styles that the company produces.

Tonnellerie Bordelaise French Oak Barrels
Description: Tonnellerie Bordelaise offers a full range of Bordeaux- and Burgundy-style barrels made from the finest grain sessile oak from the forests of Central France. Difference: Tonnellerie Bordelaise is a small cooperage that makes artisan-style barrels. They source and mill their own French oak, which allows them to trace and control every piece of wood from specific forest lot to finished barrel. Traceability is guaranteed. The company ages their stave wood in their own outdoor yards for 24 to 36 months to achieve optimal seasoning.

Oak Barrels
Description: Tonnellerie Radoux USA's French Oak barrels come from Haute Futaie-grown oak from forests maintained for hundreds of years under strict French regulations. Only the tightest-grain oak is selected from the forests in the center of France, Vosges and central European areas. The company's American Oak barrels are also the highest quality white oak from Missouri, Minnesota and the Appalachian regions. French Oak and American Oak barrels, puncheons, chips and stave-inserts are offered by Tonnellerie Radoux.
Difference: Each barrel is produced to meet a wine's and winemaker's distinctive style, and personalized service is reinforced by strict quality control to ensure consistency. Radoux has a dedicated Research and Development team dedicated to producing new toasting techniques and levels to maximize the oak's beneficial influence on a particular varietal of wine. In 2004 Radoux introduced their special Sangiovese toasted Barrels, and in 2005 they will be introducing a barrel specifically for Pinot Noir.

Barrels
Description: Barrel Profiling uses the latest temperature sensors, a computer network and touch-screen monitors to toast every barrel coopered; the cooper simply inputs the barrel's wood specifications and desired toasting profile. Barrel Bungs

The Boswell Bung
Description: Durability, design and manufacturing processes are important aspects to consider when choosing silicone rubber bungs. All bungs are subject to the effects of repeated contact with sulphur dioxide over time. Bung durability is directly proportionate to the quality level of the raw material used before milling. Among FDA-approved ratings, there are many available grades of silicone rubber for different applications; the higher the quality, the more durable the bung. Boswell bungs are made from the highest quality material approved for food handling.
Bungs should be designed to seal the tapered bunghole completely from top to bottom. The bottom of the bung should not project into the wine. Bungs that fit correctly are less susceptible to deterioration. Ergonomic domed tops are easy to handle in the cellar. The dome also minimizes liquid accumulation. Date stamping on bungs allows you to track longevity. Boswell bungs are designed with all these requirements in mind.
Difference: Manufacturing processes are crucial to create the best performing bung. The higher the density of the silicone rubber, the more resistance to degradation over time. Specific curing processes produce the necessary density. The inner metallic surfaces of the bung mold must be carefully maintained to produce a desirable finished product. Humi-Fan
Description: Humi-Fan is a custom-engineered, automated humidification system for medium-to- large wine barrel aging rooms. The system combines a high velocity, oscillating fan with micro-fine misting nozzles to establish and maintain high relative humidity levels evenly throughout the space without any condensation. The fan can be mounted to a wall or ceiling above the barrels. The high pressure pump station can provide water to multiple fans, and features absolute quality water filtration and an axial vein, oil-less pump for extra clean discharge, reduced system maintenance and extended nozzle life. High relative humidity levels are automatically maintained by an accurate humidistat and controlled with a user-friendly touch screen panel. The control panel has many redundant safety features to prevent over-humidification and system damage from low water pressure and electrical failure. This PLC-based controller can also be integrated to control existing temperature and other systems.
Ed Guinee & Associates, Inc. is also completing testing on the Humi II, an economical, automated humidification system designed for small barrel rooms. The Humi II will be sold as a kit, including a flexible, high-pressure hose nozzle bar or fan ring, a pre-plumbed pump station, humidity sensor and programmable control. All that is needed to run the system is a hose outlet for water supply and 110V electrical supply.
Difference: Stationary emitter line systems require many nozzles, and the mist falls directly over the barrels. The Humi-Fan system quickly pushes moisturized air horizontally above the barrels, and the oscillating air movement aids in maintaining more even temperature and humidity levels throughout the space. The centralized nozzle ring mounted to the fan reduces the number of nozzles required to humidify the space, is much easier to observe for potential clogging or leaking, and dramatically reduces the labor required to service the nozzles.

Rapidfil Oak Barrel Filling/Emptying Unit
Description: The Rapidfil Unit automatically fills, empties or tops barrels precisely and consistently. Barrels can be emptied without sucking air (avoiding DO pick up), and at least one liter of additional wine can be gained from each barrel. Wine can be racked accurately, with the height adjustable for each barrel. Barrels can be filled accurately to full (without overflows); the fill-height is adjustable for fermenting wines to allow for headspace. Topping head allows barrels to be topped accurately in place without pulling racks down.
Difference: The new detachable heads allow easy removal of the head from the end of the hose. Only one set of hoses is used, which makes storage easier and is more user-friendly when changing from filling to emptying. Rapidfil can reduce maintenance costs for hose replacement. Description: Canton's oak alternative division, XTRAOAK, is introducing its new Cordon Tank Insert System. The pre-assembled Cordon Oak Insert bundles install easily on the interior wall of any tank. A winemaker can create their own "house" oak style by combining toast levels or different types of oak within a single tank. Available in French or American oak, Canton cooperage-grade inserts have been naturally seasoned and can be toasted to fit your specific needs. Innerstave Fan

Description: The process is based on controlled steam distillation whereby steam and water under pressure force out volatile trace compounds within cork cells. It has long been known that steam could be used to extract TCA from contaminated cork. However, until now, applying this type of process on a full industrial scale was nearly impossible. Over three years and tens of thousands of tests later, the process now known as "ROSA" is being used commercially to successfully treat cork granules used in 1+1 technical corks.

Written by physical chemist and winemaker Yair Margalit, author of the best selling Winery Technology and Operations and Concepts in Wine Technology, it is now totally revised and updated, making it, in editor James Crumb's words, "the broadest, most meticulous book on the topic in print." The main objective of the book, according to the author, is to "make it easier for the professional winemaker, food science and enology student, or anyone who is interested in going deeper into understanding the winemaking 'mystery,' to follow the winemaking literature without the necessity of referring to a chemistry book in order to find the basic details on specific issues under study." Dr. Margalit also gives the biochemist's slant on the contentious for equipment installation and removal just prior to harvest.
Water content profiles have been determined for most varieties. For example, Chardonnay is commonly kept at about 70 units through the season and harvested at 50. The reds vary more widely depending on the strategy of the viticulturalist. Merlot can begin the season at 90 but is allowed to drop to 25 at harvest. For advanced users, sensors can also be implanted directly in the berries to determine water content and sucrose import. The equipment is solar-driven and comes as a monthly service with a one-time charge for the 15-sensor wiring harness.
Difference: There are no other vine-based automatic measurements of vine water content. This method was used on 45 blocks of production wine grapes in 2004. Users can easily determine the cause and effect of irrigation events. But more importantly, users can fine-tune the final water content for optimizing berry flavor at harvest.

Collard Raptor Leaf Remover
Description: Using the Collard Raptor Leaf Remover allows ambient light into the vines, which ultimately improves the fruit quality. The cost savings is evident when a Raptor can do what a crew doing hand labor has previously done. Description: This is a unique bottling line offering a number of distinct advantages and options. The Fimer Monobloc 9-1 with Revolving Turret is a filler, corker or capper capable of an output of approximately 25 bottles per minute. Description: Elutriate Systems designs, installs, permits and operates state-of-the-art winery wastewater treatment systems. These systems utilize very efficient aeration and concentrated bacteria levels to quickly digest the high levels of BOD in the wastewater to meet strict discharge requirements. By making the systems very efficient, with high digestion rates of BOD, the volume of the systems is smaller, the amount of electricity used is less, also the amount of space required is reduced from acres for ponds to square feet in size for Bio Reactors. The wastewater flows through a screening system and into the first aeration tank where it is pH-adjusted automatically. The aeration is provided by very durable rotary blowers and is delivered and distributed by fine bubble diffusers. The smaller the bubble, the better the oxygen transfer with less horsepower required. The aeration is also controlled by a dissolved oxygen sensor and a variable frequency drive, allowing the blower(s) to speed up and slow down based upon demand.
Difference: Most wineries utilize ponding systems which are not efficient in both land-use and electrical usage. This is compounded in that the inefficiency of the aeration requires a larger volume of the system, which means more volume needs to be aerated in the same inefficient manner. Bio Reactors represent a new look at winery wastewater and are able to convert a liability into an asset. With ponding systems, the bacteria which consume the dissolved sugars (BOD) settle to the bottom of the pond. These ponds eventually require dredging to clean them out. Often this is considered a hazardous waste as metals also accumulate on the bottom of the pond. Zinc from galvanized metal corroded by acidic wine is common. The bacteria used in Bio Reactors produce compost tea. Beneficial microbes speed the conversion of the organic material in the soil to what the roots require. The beneficial aerobic bacteria overpopulate more harmful bacteria, which favor anaerobic conditions.

Difference: One of the largest winemakers in California had PermaTec 4000 applied under a bottling line in 1994, and the coating is in near perfect condition. Efferbaktol Granules, in the same composition as the Efferbaktol SO2 tablets, are being introduced as a new way to add SO2 to tanks and barrels. The granules come in a packet that can be easily distributed over a tank or into a barrel. They are a mixture of metabisulfite and potassium bicarbonate in the shape of small round pellets. This form allows them to slowly dissolve from the top down with effervescence to introduce a homogenous addition of SO2. There is little need for mixing or stirring with this product. The packets of granules are available in different sizes for tank or barrel additions. Another function of this product is the distribution of SO2 over grape bins and musts when they are delivered from the vineyards. The packet of SO2 can be sprinkled over grapes in order to have a safe and even SO2 layer in grape bins.
Difference: The Efferbaktol Granules' closest competitor is the Efferbaktol Tablets. The Granules are a better application because of the homogenous/top-down dissolving that results from the addition. In the past, winemakers have had problems with SO2 tablets sinking to the bottom of tanks or barrels, getting stuck in lees and not fully dissolving.
