DESCRIPTION: Marsannay introduced two new toasts in 2011: "SP" is a much slower, longer toast with a smaller chimney in which the fire is kept very small. This toast shows well in Pinot Noir that is aged 12 to 24 months. "Brioche" was named by our cooper's sensory memory of walking into a bakery. Water is used at specific intervals, during toasting, to create a white wine toast that also shows well on some reds.
