Inside The Fermenation Process: Seguin Moreau-Designed Innovation For Château Mouton Rothschild
After more than six years of study, research, prototypes and production, Seguin Moreau has unveiled a newly patented advancement in oak tanks designed especially for Château Mouton Rothschild: vats fitted with food-quality transparent Plexiglas staves.
In 2006 the team at the Premier Grand Cru Classé of Pauillac began to quietly plan a refurbishment of the estate’s cellar. Several cooperages consulted on the original project to build innovative oak tanks. One specification was clear—to be able to see inside the fermentation process.
Towards the end of 2009, Château Mouton Rothschild’s technical team selected Seguin Moreau’s proposal, led by Jean-Baptiste Comoy, manager of large containers.
The cooperage delivered a total of 44 vats, each fitted with two transparent staves, between March and August of 2011. They were then installed that September.
This innovation in oak containers was reserved for Château Mouton Rothschild until the cellar completion, which the estate unveiled on June 16, 2013 in conjunction with the beginning of Vinexpo.
For the first time observers can watch the tanks vats filling up with red wine and then follow every stage in the vinification process, including cap formation, pumping over and more. To get a closer look, a video is available here.
The transparent stave option is now available for Seguin Moreau tank customers and is quoted individually upon request.
