Introduced in Europe by Oenobrands in 2007, Claristar is a mannoprotein application for still wine tartrate (KHT) stabilization. Originally marketed for white and rosé wines, Claristar recently expanded its mannoprotein application to red wines as well.
Claristar is a specialty mannoprotein product for natural stabilization of wines. It is the result of a patented extraction and separation technique that isolates the fraction of mannoproteins from S. cerevisiae with the highest Tartrate Stability Index (TSI). When added to wine, Claristar inhibits the nucleation and growth of potassium tartrate crystals. In addition to stability, the sensory balance of red, white and rosé wines are enhanced by the positive effect of the mannoproteins, and wine’s natural acidity is preserved. Users note improved and fresher aromatics as well as smoothness on the palate.
Sold as a liquid, Claristar’s highly purified mannoproteins are 100 percent soluble in wine. It can be added directly and homogenizes easily. Due to its instant stabilization properties, wine can be treated immediately prior to bottling.
