Paperwork. The endless paperwork. After the wine is put to bed sifting through the PO's, harvest paperwork, vineyard tags, etc. and entering them into the database/excel spreadsheet or what ever you have. Then the ordering of supplies for filtering (if you filter), sulfuring(if you sulfur), and bottling. Then the meetings....I've said too much.
